Let vegetables simmer in sauce until tender
Cook pasta (preferably gluten free) until Al Dente. Could substitute with brown rice, Spaghetti squash, spiralized zucchini... Plan 2/3 cup per serving.
Top each serving with 3-4 oz cooked shrimp or chicken (chopped) and grated parmesan
